Honey and Sumac Carrots with Ricotta

Roasted carrots tossed in honey and sumac, layered over silky ricotta and paired with warm Naan for dipping — a simple showstopper for any holiday table.

INGREDIENTS

  • Atoria’s Family Bakery Traditional Naans
  • About 8 to 12 medium carrots, peeled, halved and sliced
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp honey
  • 1 tbsp sumac, plus more for serving
  • Kosher salt and freshly ground black pepper
  • 1/2 cup ricotta
-Lemon juice, for serving

DIRECTIONS

  1. Preheat your oven to 400°F.
  2. Toss carrots with olive oil, honey, sumac, salt and pepper.
-On a baking sheet lined with parchment, add your prepared carrots.
  3. Transfer to the oven and roast for 30 to 40 minutes, tossing halfway through, until the carrots are fork tender and charred in places.
  4. To serve, spread a layer of ricotta on the bottom of a shallow platter, then top with sumac carrots.
  5. Finish with a squeeze of fresh lemon juice, a sprinkle of sumac, and warmed Naan to dip, spread, and scoop.
