Greek Bowl with Pita

Kick off the new year with this nourishing Greek bowl, falafel, fresh veggies, and warm Pita come together for a simple, wholesome meal.

INGREDIENTS

  • 1 Atoria's Family Bakery Traditional Pita
  • Store-bought falafel
  • Lettuce and chopped veggies of choice
  • 1 red onion, thinly sliced
  • 2 garlic cloves, minced
  • 1–2 tbsp olive oil
  • 1 tsp gyro seasoning
  • Fresh parsley, chopped
  • Dried oregano
  • Salt & pepper, to taste
  • 1-2 tbsp tzatziki, for serving

DIRECTIONS

  1. Heat olive oil in a skillet over medium heat. Add the red onion and garlic; sauté until soft and fragrant.
  2. Season with gyro seasoning, parsley, oregano, salt, and pepper, then remove from heat.
  3. Slice Pita into triangles and warm or toast until soft and slightly golden.
  4. Heat or crisp the falafel in a skillet or air fryer until golden brown.
  5. Build your bowl by adding a bed of lettuce, then topping with falafel, tzatziki, onion mixture, and your favorite veggies. Add sliced Pita wedges.
  6. Finish with fresh toppings like tomato or cucumber, if desired. Serve and enjoy!
