INGREDIENTS
- 2 Atoria’s Family Bakery Whole Grain Pitas
- 2 tbsp olive oil
- 1 tsp Kosher salt
- ½ tsp black pepper
- 2 tsp dried oregano
- 1 tsp dried parsley
- ½ tsp garlic powder
- 1 zucchini, sliced
- 2 bell peppers, sliced into strips
- ½ large red onion, cut into strips
- 1-pint cherry tomatoes, cut in half
- 2 tsp olive oil
- 1 lb. ground beef
- 2 large cloves garlic, minced
- 1 ½ tsp oregano
- 1 tsp Kosher salt
- ½ tsp ground black pepper
- 2 cups cooked rice
- Tzatziki sauce
- Crumbled feta cheese
- Banana peppers
DIRECTIONS
- Preheat oven to 400°F and line a baking sheet with foil.
- Toss chopped vegetables with olive oil, salt, pepper, oregano, parsley, and garlic powder. Spread on the baking sheet and bake for 25 minutes, flipping halfway.
- Heat oil in a skillet over medium-high heat. Brown ground beef, breaking it into pieces. Stir in garlic and season with oregano, salt, and pepper. Drain excess fat.
- Serve ½ cup rice in a bowl, topped with ground beef and roasted vegetables. Add tzatziki, feta, banana peppers, and Whole Grain Pita. Enjoy!
