Gyro Bowl

Sometimes all you need is a home cooked meal and good company. This flavorful Gyro Bowl paired with our Whole Grain Pita makes for a delicious night in!

INGREDIENTS

  • 2 Atoria’s Family Bakery Whole Grain Pitas
  • 2 tbsp olive oil
  • 1 tsp Kosher salt
  • ½ tsp black pepper
  • 2 tsp dried oregano
  • 1 tsp dried parsley
  • ½ tsp garlic powder
  • 1 zucchini, sliced
  • 2 bell peppers, sliced into strips
  • ½ large red onion, cut into strips
  • 1-pint cherry tomatoes, cut in half
  • 2 tsp olive oil
  • 1 lb. ground beef
  • 2 large cloves garlic, minced
  • 1 ½ tsp oregano
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 2 cups cooked rice
  • Tzatziki sauce
  • Crumbled feta cheese
  • Banana peppers

DIRECTIONS

  1. Preheat oven to 400°F and line a baking sheet with foil.
  2. Toss chopped vegetables with olive oil, salt, pepper, oregano, parsley, and garlic powder. Spread on the baking sheet and bake for 25 minutes, flipping halfway.
  3. Heat oil in a skillet over medium-high heat. Brown ground beef, breaking it into pieces. Stir in garlic and season with oregano, salt, and pepper. Drain excess fat.
  4. Serve ½ cup rice in a bowl, topped with ground beef and roasted vegetables. Add tzatziki, feta, banana peppers, and Whole Grain Pita. Enjoy!
