INGREDIENTS
- 12 Atoria's Family Bakery Spinach Lavash wraps
- 2 red bell peppers, diced
- 2 green bell peppers, diced
- 2lbs ground turkey
- 4 tbsp seasoned salt
- 1 tbsp olive oil
- 1/2 tsp of baking soda
- 2 cups egg whites
- 3 whole eggs
- 3/4 cup cottage cheese
- 1 tbsp cornstarch
- 10 slices of American cheese
- 2tsp nutritional yeast (optional)
- Salt and pepper, to taste
DIRECTIONS
- Roast the peppers: Add diced bell peppers to a greased sheet pan and season with salt and pepper. Roast at 425°F for 30 minutes.
- Prep the turkey: While the peppers roast, place the ground meat in a bowl and season generously with seasoning and baking soda. Drizzle with olive oil, mix well, and let sit for 15 minutes.
- Cook the meat: Heat oil in a pan over medium-high heat and cook the meat until fully browned and cooked through.
- Blend the eggs: Blend egg whites and whole eggs together until smooth.
- Bake the filling: Combine the cooked sausage and roasted peppers on the same sheet pan. Pour the blended egg mixture over the dish and bake at 425°F for 20 minutes. Allow to cool before slicing into 12 equal squares.
- Assemble the wraps: Place each slice onto a Spinach Lavash wrap and fold into a wrap shape. Sear each wrap on the folded side over medium heat. Store in a ziplock bag or container and freeze until ready to serve.
