INGREDIENTS
- 2 Atoria's Family Bakery Whole Grain Pitas
- 2 Portabella Mushroom Caps
- 1/2 Cup Grape Tomatoes
- 3 Mini Cucumbers
- 1/2 Lemon
- Handful of Parsley
DIRECTIONS
- Wipe 2 mushrooms with a damp paper towel, remove stems, and scoop out gills; heat 1 tbsp olive oil in a skillet over medium-high heat and cook mushrooms 2-3 minutes per side until browned & tender. Add salt/pepper + favorite seasonings, set aside.
- Meanwhile, slice ½ cup of grape tomatoes in half and add to a bowl. Wash/dry then roughly chop 3 mini cucumbers & parsley; add to bowl, season with salt/pepper and the juice from half a lemon. Toss and set aside.
- Toast 2 Whole Grain Pitas until warm & golden. Slice pitas in half and divide to plates.
- Divide the mushroom burgers and veggies to each Whole Grain Pita—enjoy!
