Nourish Foldover with Cauliflower & Chickpeas

Fresh, flavorful, and packed with spring ingredients! This Nourish Foldover features roasted cauliflower and chickpeas, creamy avocado, crisp veggies, and a tangy tahini spread all wrapped up in our Mini Whole Grain & Flax Lavash.

INGREDIENTS

  • 1 Sheet Atoria’s Mini Whole Grain & Flax Lavash
  • 1/4 head of lettuce
  • 1 avocado
  • 1 cucumber, sliced
  • 1/4 red onion, sliced
  • 1 tbsp sesame seeds

Tahini Spread:

  • 1/4 cup tahini
  • Juice from 1 lemon
  • 1/2 tbsp agave
  • Pinch of salt and pepper
  • 1 tbsp water

Cauliflower & Chickpeas:

  • 1 small cauliflower, cut
  • 1 red onion, chunked
  • 1 can chickpeas, drained
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • 2 tsp garlic powder
  • 3 tsp cumin
  • 3 tsp smoked paprika

DIRECTIONS

  1. Preheat oven to 400°F. Toss cauliflower, onion, and chickpeas with olive oil and seasonings. Roast for 35 minutes.
  2. Whisk tahini ingredients together.
  3. Let the roasted veggies cool for 5-10 minutes. Prepare fresh ingredients.
  4. Heat up your Mini Whole Grain & Flax Lavash, then assemble by spreading tahini, adding veggies, avocado, lettuce, cucumber, onion, and sesame seeds. Enjoy!
