INGREDIENTS
- 1 Sheet Atoria’s Mini Whole Grain & Flax Lavash
- 1/4 head of lettuce
- 1 avocado
- 1 cucumber, sliced
- 1/4 red onion, sliced

1 tbsp sesame seeds
Tahini Spread:
- 1/4 cup tahini
- Juice from 1 lemon
- 1/2 tbsp agave
- Pinch of salt and pepper
- 1 tbsp water
Cauliflower & Chickpeas:
- 1 small cauliflower, cut
- 1 red onion, chunked
- 1 can chickpeas, drained
- 1 tbsp olive oil
- Juice of 1/2 lemon
- 2 tsp garlic powder
- 3 tsp cumin
- 3 tsp smoked paprika
DIRECTIONS
- Preheat oven to 400°F. Toss cauliflower, onion, and chickpeas with olive oil and seasonings. Roast for 35 minutes.
- Whisk tahini ingredients together.
- Let the roasted veggies cool for 5-10 minutes. Prepare fresh ingredients.

Heat up your Mini Whole Grain & Flax Lavash, then assemble by spreading tahini, adding veggies, avocado, lettuce, cucumber, onion, and sesame seeds. Enjoy!
