One-Pot Curry

Name a better duo. This cozy one pot curry is loaded with tender chicken, veggies, and warm spices, and pairs perfectly with our soft, flavorful Garlic Naan. A simple, satisfying dinner you’ll want on repeat.

INGREDIENTS

  • 1 Bag Atoria's Garlic Naan
  • 2 chicken breasts, cubed
  • 1 1/2 cups potatoes, cubed
  • 1/2 medium yellow onion, diced
  • 1 cup carrots, chopped
  • 1 cup green beans, trimmed
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 3 tbsp curry powder
  • 1 tsp ground ginger
  • 1/4 cup water
  • 1 can coconut milk
  • Juice of half a lime
  • Rice (optional)

DIRECTIONS

  1. Prep ingredients by cubing chicken, chopping potatoes and carrots, dicing onion, and mincing garlic.
  2. Heat olive oil over medium-low heat in a dutch oven. Add in the carrots, potatoes, and onion. Cook until just beginning to get tender.
  3. Add in the chicken, green beans, garlic, and water. Cover and cook until chicken cooked through, stirring occasionally.
  4. Add in the curry powder, ginger, and coconut milk. Bring to a low simmer and cook until potatoes and carrots are fork tender.
  5. Remove from heat and squeeze in the juice of half a lime.
  6. Serve with rice and Garlic Naan!
