INGREDIENTS
- 2 Atoria's Family Bakery Traditional Pita
- 1 Sweet Onion, finely diced
- 5 Cloves Garlic, minced
- 2 Tbsp Rosemary, finely chopped
- 1 Tsp Italian Seasoning
- 1/2 Tsp Sea Salt
- 1/2 Butternut Squash, peeled and cubed
- 1 Can White Beans, drained and rinsed
- 3-4 Cups Vegetable Broth
- Handful of Chopped Greens
- 2 Tbsp Nutritional Yeast
- 1 Lemon
- Black Pepper, to taste
- Handful of Rosemary
DIRECTIONS
- Heat a large drizzle of olive oil in a large pot over medium heat. Add the onions and garlic and cook until translucent and just starting to brown. Stir in the rosemary, Italian seasoning, and salt.
- Add the butternut squash to the pot and cook for 2-3 minutes. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and cook for 8-10 minutes, or until the squash begins to soften.
- Stir in the white beans and simmer the stew for another 5-7 minutes. Use the back of a wooden spoon to gently crush some of the beans, which will help thicken the stew. Stir in the nutritional yeast and chopped greens.
- Serve with warm Atoria’s Traditional Pita, a drizzle of pesto, and a sprinkle of fresh rosemary. Enjoy!
