Squash, White Bean & Rosemary Stew

Squash, White Bean & Rosemary Stew

This is the coziest, comforting bowl. Lightly sweet squash and hearty white beans simmer together with rosemary for a fragrant, satisfying dish. Serve with our Pita Bread for a satisfying meal.

INGREDIENTS

  • 2 Atoria's Family Bakery Traditional Pita
  • 1 Sweet Onion, finely diced
  • 5 Cloves Garlic, minced
  • 2 Tbsp Rosemary, finely chopped
  • 1 Tsp Italian Seasoning
  • 1/2 Tsp Sea Salt
  • 1/2 Butternut Squash, peeled and cubed
  • 1 Can White Beans, drained and rinsed
  • 3-4 Cups Vegetable Broth
  • Handful of Chopped Greens
  • 2 Tbsp Nutritional Yeast
  • 1 Lemon
  • Black Pepper, to taste
  • Handful of Rosemary

DIRECTIONS

  1. Heat a large drizzle of olive oil in a large pot over medium heat. Add the onions and garlic and cook until translucent and just starting to brown. Stir in the rosemary, Italian seasoning, and salt.
  2. Add the butternut squash to the pot and cook for 2-3 minutes. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and cook for 8-10 minutes, or until the squash begins to soften.
  3. Stir in the white beans and simmer the stew for another 5-7 minutes. Use the back of a wooden spoon to gently crush some of the beans, which will help thicken the stew. Stir in the nutritional yeast and chopped greens.
  4. Serve with warm Atoria’s Traditional Pita, a drizzle of pesto, and a sprinkle of fresh rosemary. Enjoy!
