Street Corn Flatbread

Street Corn Flatbread

Inspired by classic Mexican street corn, this flavorful flatbread layers roasted corn, mozzarella, cotija, red onion, and jalapeño on Atoria’s Family Bakery Traditional Naan. Finished with a zesty lime crema, it’s a fun, crowd-pleasing dish perfect for Friday nights or summer gatherings.

INGREDIENTS

  • 1-2 Atoria's Family Bakery Traditional Naans
  • 1 cup frozen roasted corn
  • 2 cups shredded mozzarella
  • 1/2 crumbled cotija cheese
  • 1/4 red onion, sliced
  • 1-2 jalapeños, depending on taste
  • 1-2tbsp extra virgin olive oil
  • ½ cup sour cream
  • 2 tbsp mayo
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt

DIRECTIONS

  1. In a bowl, mix together the sour cream, mayo, lime zest, lime juice, and spices.
-Preheat the oven to 475°F.
  2. Place a piece of parchment paper on a baking sheet and place Naans onto the parchment paper. Brush with some oil.
  3. Spread about 2/3 of the sauce over the surface of the Naans, leaving a small border around the edge.
  4. Set the remaining sauce aside to add as a topping later.
  5. Add the corn, jalapeño, onion, and cheeses to the Naans. Put the flatbreads into the oven. Bake for 10-15 minutes, or until the cheese is melted and the Naans are lightly crisped on the bottom and around the edges.
  6. Remove from the oven to cool slightly. Slice and add extra sauce, chili powder, and lime juice. Enjoy!
