INGREDIENTS
- Atoria's Family Bakery Whole Grain Pita
- Rainbow Veggie Mix
- Garbanzo Beans
- Dairy-Free Tzatziki
DIRECTIONS
- Preheat oven to 450°; drain beans, then rinse + pat dry; toss with 1-2 tbsp oil, salt/pepper + your favorite seasoning (we like Garlic and Herb or Taco Seasoning).
- Scatter beans on a sheet pan, roast 25-30 minutes, flipping 2-3 times throughout cooking, until beans are crisp on the outside but soft in the middle.
- Meanwhile, toast 2 Atoria's Whole Grain Pitas until warm and golden; slice pitas in half and divide between plates.
- Stuff each pita with a handful of rainbow veggie mix and top with crispy chickpeas +1-2 tbsp sauce each.
