INGREDIENTS
- 2 Atoria's Family Bakery Traditional Pita
- Handful Rainbow Veggie Mix
- 2 Tbsp Tzatziki Dip
- 6-12 Eggplant Chickpea Veggie Balls
DIRECTIONS
- Preheat oven or air fryer to 375°; add veggie balls to a sheet pan or air fryer basket; bake 10 min or air fry for 4-5 min until heated through, shaking halfway; set aside.
- Meanwhile, heat 1 tbsp olive oil in skillet over med-high heat & cook veggie mix with salt and pepper for 3-5 minutes until tender.
- Toast 2 Traditional Pitas until warm and golden; slice pitas in half.
- Divide veggie balls & veggies between Traditional Pitas and then dollop each half with 1 tbsp tzatziki—yum!
