Tzatziki Eggplant Ball Pita Sandwich

A savory Pita sandwich filled with crispy eggplant balls, creamy tzatziki, and fresh veggies. A light and flavorful Mediterranean-inspired meal! Recipe by Hungryroot.

INGREDIENTS

  • 2 Atoria's Family Bakery Traditional Pita
  • Handful Rainbow Veggie Mix
  • 2 Tbsp Tzatziki Dip
  • 6-12 Eggplant Chickpea Veggie Balls

DIRECTIONS

  1. Preheat oven or air fryer to 375°; add veggie balls to a sheet pan or air fryer basket; bake 10 min or air fry for 4-5 min until heated through, shaking halfway; set aside.
  2. Meanwhile, heat 1 tbsp olive oil in skillet over med-high heat & cook veggie mix with salt and pepper for 3-5 minutes until tender.
  3. Toast 2 Traditional Pitas until warm and golden; slice pitas in half.
  4. Divide veggie balls & veggies between Traditional Pitas and then dollop each half with 1 tbsp tzatziki—yum!
