Egg Salad Breakfast Pita

A creamy egg salad with Dijon, radish, and green onion is topped with avocado and arugula on a warm Atoria’s Family Bakery Traditional Pita. This wholesome, satisfying combo works any time of day.

INGREDIENTS

  • 1 Atoria’s Family Bakery Traditional Pita
  • 1/2 avocado
  • 2 hard-boiled eggs
  • 1/2 tbsp mayo
  • 1/2 tsp Dijon
  • 1/8 cup diced radishes
  • 1/8 cup diced green onion
  • Handful of arugula
  • Chili flakes, to taste
  • Salt and pepper, to taste

DIRECTIONS

  1. Bring a small saucepan of water to a boil. Add eggs & set timer for 9 minutes.
  2. Remove eggs & place into an ice bath for 4 mins.
  3. Peel & place into a bowl; mash with a fork. Add remainder of ingredients & mix until combined.
  4. Warm your Pita on a pan over low heat. Top with avocado & arugula + egg salad.
  5. Fold Pita in half and enjoy!
