INGREDIENTS
- 4 Atoria’s Family Bakery Mini Spinach Lavash Wraps
- 4 Cups Baby Spinach
- 2 Tbsp Sundried Tomatoes
- 3 Eggs
- Salt & Pepper
- ¼ Cup Cream Cheese
- ½ Cup Crumbled Feta Cheese
DIRECTIONS
- In a medium-size skillet, cook spinach over medium heat until wilted.
- Add spinach, sundried tomatoes, eggs, salt, and pepper to a medium bowl and mix thoroughly.
- Pour the egg mix onto the same skillet over medium heat and cook for 2-3 minutes.
- In the meantime, spread the cream cheese evenly across 4 Mini Spinach Lavash wraps, keeping it mainly to the middle 1/3 section. Place the cooked eggs overtop of the cream cheese on each wrap and then top each with the crumbled feta cheese.
- Fold each Mini Lavash wrap like a burrito, and place each back onto the skillet. Cook for about 3 minutes on each side, or until golden-brown and crispy.
