Grilled Spinach & Feta Breakfast Bites

These grilled spinach & feta breakfast bites pack eggs, feta, and spinach into warm, crispy Mini Spinach Lavash wraps for a satisfying morning boost. They’re wholesome, easy to assemble, and deliciously portable for busy weekdays.

INGREDIENTS

  • 4 Atoria’s Family Bakery Mini Spinach Lavash Wraps
  • 4 Cups Baby Spinach
  • 2 Tbsp Sundried Tomatoes
  • 3 Eggs
  • Salt & Pepper
  • ¼ Cup Cream Cheese
  • ½ Cup Crumbled Feta Cheese

DIRECTIONS

  1. In a medium-size skillet, cook spinach over medium heat until wilted.
  2. Add spinach, sundried tomatoes, eggs, salt, and pepper to a medium bowl and mix thoroughly.
  3. Pour the egg mix onto the same skillet over medium heat and cook for 2-3 minutes.
  4. In the meantime, spread the cream cheese evenly across 4 Mini Spinach Lavash wraps, keeping it mainly to the middle 1/3 section. Place the cooked eggs overtop of the cream cheese on each wrap and then top each with the crumbled feta cheese.
  5. Fold each Mini Lavash wrap like a burrito, and place each back onto the skillet. Cook for about 3 minutes on each side, or until golden-brown and crispy.
