Marrakech Lamb Wraps with Green Harissa & Cucumber Yogurt

These wraps feature seasoned lamb rolled in Lavash with spicy green harissa and cooling cucumber yogurt for a quick Moroccan-inspired meal. Recipe by Sunbasket.

INGREDIENTS

  • 2 Atoria's Family Bakery Whole Grain & Flax Lavash wraps
  • 8 oz ground lamb
  • 1 garlic clove, minced
  • 1 tsp ground cumin
  • ½ tsp paprika
  • 1 cup mixed greens
  • 1 cup cucumber, diced
  • ½ cup plain yogurt
  • 2 tbsp green harissa sauce
  • 1 tbsp olive oil
  • Salt and pepper

INSTRUCTIONS

  1. Heat olive oil in a pan over medium heat. Add the lamb, garlic, cumin, paprika, salt, and pepper and cook until browned.
  2. In a small bowl, mix the yogurt and cucumber with a pinch of salt and pepper to make the cucumber yogurt sauce.
  3. Toss the mixed greens with a little green harissa.
  4. Lay the Lavash flat, spread with green harissa, then add the cooked lamb, greens, and cucumber yogurt. Roll into wraps, slice in half, and serve.
