INGREDIENTS
- 2 Atoria's Family Bakery Whole Grain Pitas
- 8 oz chicken breast, sliced
- ½ tsp ground cumin
- ½ tsp paprika
- 1 cup cherry tomatoes, chopped
- 1 cup cucumber, chopped
- 2 tbsp parsley, chopped
- ¼ cup hummus
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
INSTRUCTIONS
- Heat olive oil in a pan over medium heat. Add the chicken with cumin, paprika, salt, and pepper and cook until browned and cooked through.
- In a bowl, toss the tomatoes, cucumber, parsley, lemon juice, salt, and pepper to make a quick salad.
- Toast the Pitas until warm and cut in half.
- Spread hummus inside each Pita, then fill with the chicken and tomato-cucumber salad. Serve.
