Shakshuka with Greens & Lavash

Eggs are baked in savory greens and served with crispy Lavash for scooping. It’s a simple, hearty dish with bright, fresh flavor. Recipe by Sunbasket.

INGREDIENTS

  • 2 Atoria's Family Bakery Whole Grain & Flax Lavash wraps
  • 1 shallot, sliced
  • 2 cups kale
  • 2 cups spinach
  • 4 eggs
  • ½ cup plain yogurt
  • 1 lemon
  • 1 tbsp za’atar
  • 1 tbsp olive oil
  • Fresh dill
  • Salt and pepper

INSTRUCTIONS

  1. Heat olive oil in a pan over medium heat. Add the shallot and cook until softened.
  2. Stir in the kale, spinach, and a pinch of salt and pepper and cook until the greens wilt.
  3. Make small wells in the greens and crack the eggs into the pan. Cover and cook until the whites are set.
  4. Mix the yogurt with lemon juice and zest.
  5. Toast the Lavash wraps in the oven until crisp.
  6. Serve the eggs and greens with yogurt sauce, fresh dill, and toasted Lavash.
