INGREDIENTS
- 2 Atoria's Family Bakery Whole Grain & Flax Lavash wraps
- 1 shallot, sliced
- 2 cups kale
- 2 cups spinach
- 4 eggs
- ½ cup plain yogurt
- 1 lemon
- 1 tbsp za’atar
- 1 tbsp olive oil
- Fresh dill
- Salt and pepper
INSTRUCTIONS
- Heat olive oil in a pan over medium heat. Add the shallot and cook until softened.
- Stir in the kale, spinach, and a pinch of salt and pepper and cook until the greens wilt.
- Make small wells in the greens and crack the eggs into the pan. Cover and cook until the whites are set.
- Mix the yogurt with lemon juice and zest.
- Toast the Lavash wraps in the oven until crisp.
- Serve the eggs and greens with yogurt sauce, fresh dill, and toasted Lavash.
