Curry Beef Strip Pita Pockets

Curried beef is tucked into warm Pita pockets for a quick, savory meal. Fresh toppings and creamy sauce add a cool, crisp finish. Recipe by Hungryroot.

INGREDIENTS

  • 2 Atoria’s Family Bakery Whole Grain Pita pockets
  • 10oz thin-cut beef strips
  • 2 coconut curry sauce
  • A few handfuls of lettuce

INSTRUCTIONS

  1. Heat a lightly oiled skillet over medium-high heat. Pat the beef dry, add it to the pan in a single layer, and sear for 2 minutes (add 1 extra minute for well-done). Flip, cook for 1 more minute, season with salt and pepper, then set aside.
  2. Meanwhile, toast the Pitas until warm and lightly golden. Slice each Pita in half and place on plates.
  3. Spread 1 tablespoon of sauce inside each Pita. Divide the beef among the Pitas, top with a handful of lettuce, and serve.
