Greek Salad Pinwheels

Fresh, vibrant, and full of Mediterranean flavor, these Greek Salad Pinwheels combine creamy hummus, crisp veggies, briny olives, and tangy feta all rolled up in Atoria’s Spinach Lavash wraps. A quick, no-cook recipe perfect for a light lunch, snack, or party appetizer!

INGREDIENTS

  • 2 Atoria's Family Bakery Spinach Lavash wraps
  • 4oz Hummus
  • 1 Beefsteak Tomato
  • 1 Red Onion
  • 1 Cucumber
  • 1/4 Cup Olives
  • 1/4 Cup Crumbled Feta
  • 2 Cups Baby Spinach

DIRECTIONS

  1. Dice the tomato, onion, and cucumber; Set aside.
  2. Lay both Lavash wraps out on a cutting board. Spread 2oz of hummus across each sheet. Divide the diced tomato, onion, cucumber, olives, crumbled feta, and spinach evenly across each Lavash wrap, making sure to cover completely.
  3. Using your hand, gently press down on the toppings to flatten/stick to the hummus, then tightly roll up each Lavash wrap.
  4. Place the rolls seam-side down on a cutting board and cut into 1-inch slices.
