INGREDIENTS
- Atoria's Family Bakery Traditional Lavash wraps
- 4 tbsp olive oil
- 2 cups cooked rice
- Sprinkle of ground saffron powder (optional)
DIRECTIONS
- Heat the olive oil over medium-high until it just starts to sizzle. Remove the pot from the heat and arrange the Traditional Lavash in a single layer on the bottom. A little overlapping is fine.
- Using a slotted spoon or spatula, gently transfer the cooked rice into the pot. Start by fully covering the bread layer, then gradually build upward so the rice forms a loose pyramid shape.
- Optional: Sprinkle a small pinch of ground saffron on top for color and aroma.
- When ready to serve, cover the pot again and steam over medium-low heat for 45 minutes to 1 hour, or until steam rises and the rice is tender. Use a fork to carefully lift the edge of the Lavash layer, your tahdig should be a light golden brown.
